{taking a break}

this past week i took a break.
 
i scheduled my posts and tweets and then i disconnected. i disconnected from the online world. i did not check my emails or read blog posts. i stayed off twitter.
 
i needed some time to gather my thoughts and decompress. I needed time to focus on my family and do what is right for them. they needed my full attention.
 
and as nice as it was to take a break and get my family back in order i did miss the online world a little bit. i didn't miss the giveaways or cyber sales, but i missed the community. i may not be a big part of the online community, but i am still a part of it my own little way and i missed that. but one of the great things about being part of community such as this is that when you share your struggles, the community opens their arms and gives you a much needed hug. i love this community and i am so thankful to be a part of it.

{100 things about me}



just in case you wanted to know a little bit more about me or you just need a good laugh...her are...


A 100 things about me:

1. i married my college sweetheart; whom i intially became friends with to pass gen chem.
2. i hate capitalizing letters when i type; hence, why none of this will be capitalized.
3. when i was little i thought i was french because my first and middle name are french. i was very disappointed to learn that i was in fact, not french.
4. for as long as i can remember i have been obsessed with all things french ( see #3).
5. when i was little i always wanted 6 six kids, then i had einstein and changed my mind a bit, now i just want 5.
6. i love to read.
7. i love school. i would be a professional student if i could get paid to do so.
8. i taught myself to sew...i absolutely love sewing.
9. i am procrastinator and i'm so good at it that i could give lessons.
10. i love to stay up late...going to be early scares me.
11. i am not a morning person...i hate waking up early.
12. i love the beach...so much so i want to live there one day.
13. i am addicted to coffee...and anything coffee flavored for that fact.
14. i have a notorious track record for not finishing things...something i don't like about myself that i am working on changing.
15. i love to take pictures, especially of my cute kids; i just don't like to be them.
16. the husband and i celebrate our wedding anniversary every month...we have ever since we got married.
17. i live in flip flops.
18. i adore high heels...i collect 'em actually...hardly wear them because then i'm taller than the husband.
19. i love to read a bit before bed...it helps me sleep better.
20. one of my favorite candies is the violet crumble.
21. i absolutely adore audrey hepburn! she is a true starlet.

38. when i first became a mom the one thing that terrified me about being a mom was potty training...now that i've successfully jumped that hurdle, the thought of having the 'birds and the bees' talk makes me want to faint.
39. i must wear sunglasses at all times while outside.
40. i am notorious for not sending out thank you cards...i would much rather say it in person.
41. i love to bake.
42. i am a very picky eater, largely due to the fact that i had severe allergies and was a sickly child; however, i so wish i was not such a picky eater.
43. sometimes i wish i was a professional photographer.
44. i have a slight magazine addiction... i currently subscribe to 10 different magazines.
45. i cannot leave the house without my wedding ring, earrings, watch, and necklace...otherwise i feel naked.
46. i never take off my wedding ring...if i have to for some crazy reason i always have my husband put it back on for me.
47. i am very shy, and because of this many people assume i am stuck up. (remember what they say about people who assume.)
48. i own a record player and i love playing records.
49. i would rather spend the day with my kids than clean my house.
50. i love birds, everytime i own them one ends up killing the other. i currently have no birds.
51. when i was kid some of my favorite movies were: "the birds", "follow that bird", and "the return of oz"
52. i like making up my up my own recipes.
53. i used to swim competitively in highschool.
54. my husband and i hope to open a bookstore one day.
55. i used to be vehemently opposed to the kindle and nook, that was until i got a nook and fell in love.

60. i can only drink hot chocolate if it's cold outside.

{ i'm a coupon junkie}





i have a confession....
 
i am a coupon junkie.
 
yes, i said it and i'm not ashamed.
 
i first started couponing when einstein was a baby...babies can be a little expensive. i have always used coupons since then, sometimes more aggressively than others. but when my husband lost his job a few years ago, coupons became our only way to survive. And now, as our income/job situation has changed since my little princess arrived, coupons have been our lifeline.
 
Coupons are not just for food anymore. You find coupons for nearly everything now. Not only coupons, but special online deals and discounts that make living on tight budget managable and even fun....yes, i said fun. just because you live on a tight budget doesn't mean you can't have fun.
 
a couple friends recently asked me to share my couponing secrets. so one afternoon, while our babies were playing, i showed them the art of couponing and showed them how i find deals on nearly everything, like eye appiontments and such. they had so much fun and learned so much they started telling others about it. and it got me thinking. I know there are others out there like me and with the holiday season coming what better time to save money. and so i have decided to "share the wealth" sotospeak. throughout the day/week as i come across a good deal/good buy i will post it on my Facebook fan page, because sometimes there are so many deals it would be too hard to blog about it, otherwise i would be blogging all day.

{chasing away monday one potato at a time}

mondays have a history of not being the most favorite day of week. so i thought i would share a little recipe to make you forget that it's monday one potato at a time.
 
{disclaimer:: i apologize in advance for the not-so-great pictures. I was using my cellphone, getting einstein ready for cubscouts and keeping my little princess out of trouble...i was bit distracted to say the least.}
 

confession: this soup smelled so good I immediately dove in and started chowing down that I forgot to take a picture of the delishness until the bowl was half gone...sorry.
 
now, i am a chef by no means. my prowess is from my stellar education from foodnetwork and julia child. i look at cooking as an experiment of sorts. this experiment came out very, very well...and to top it off it's lowfat too!
 
baked potato cheese soup
{this soup tastes like you're biting into a baked potato, no joke}
 
here's what you need:
*2 quarts of chicken stock (chicken broth works too)
*2 cups of milk (i used 1%)
*1 cup of fat free half and half
*2 carrots
*2 stalks of celery
*half an onion
*4 large russet potatos
*2 red potatos
*1 cup of chopped bacon
*2 cups of cheddar cheese
*salt and pepper to taste
*cornstarch for thickness
 
take the carrots, celery, and onion and throw them in the food processor and pulverize them till they are mush. in a dutch oven (or any other big pot you have on hand) add a little oil, once warm throw in your carrot-celery-onion mush and let it sweat for a bit.
 
after it's been sweating it out for around 5 minutes or so it's time to add the chicken stock.
 
 
then add the milk and half and half. this adds the creaminess without all the fat.
 
 
the soup will look like this, but do not fear it will not like this forever.
 
now it's time for the potatoes.
chop the potatoes into chunks and add to the broth/soup mixture.
 

note: leave the skin on the potatoes...so make sure you wash them well.
 
next chop some green onion, as much as you like, and add to the soup. toss in some salt and pepper for taste. bring to boil and then simmer for about 20 minutes or so until the potatos are fully cooked. (if you have an immersion blender, now is the time to get it out. and if you don't have one, i suggest you get one they are amazing.) immerse the blender and blend till your liking. finally add the bacon and the cheese and simmer for about 10 minutes until the cheese is completely melted. now, if your soup is not thin, you can add some cornstarch to thicken it up a bit to your liking.
 
after that's all done, your whole kitchen house will smelling a amazing and make you want to eat. so, grab a ladle and bowl and serve yourself some delish goodness. just be prepared upon first bite, it will taste like you are taking a bite of a baked potato...and for a moment you might just forget that you're eating soup.
